Don’t worry, you can just come on in and get bagels at the counter too! We do run out on weekends though so preorder to guarantee your favorites.
Our story
New Wave Bagel was co-founded and is operated by Cheryl Storms and Matt Cardwell. We both have extensive backgrounds cooking and baking in the Bay Area, and are alumni of nationally acclaimed bakery Wayfarer Bread in La Jolla. We share a love for New Wave and punk music as well as baking, and aim to be a part of the coastal North County community where we bring our fresh sourdough bagels to the masses. Our philosophy and ethos is based in creating the best bagel experience we can, while only using locally harvested organic produce, eggs, meat, and fish.
New Wave started in May of 2024 as a pop-up on Sundays at Ironsmith Coffee in Encinitas. We also sold a select menu of bagels and schmears at MichiMichi Bakery Collective in Banker’s Hill, and at LuckyBolt Bakery in Sorrento Valley. We are not currently offering breakfast sandwiches on a regular basis; we occasionally do special sandwich pop ups—the best way to keep track is by following us on instagram @newwavebagel.
We just signed a lease on a brick and mortar space for our first bagel shop on the Coast Highway in Encinitas! We are so grateful for our loyal customers and friends that have made this huge accomplishment possible. Along with our coffee partner Crossings Coffee, we are currently operating in the shop as a pop up while our kitchen gets built, selling bagels, schmears, and coffee/cold brew. Stay tuned for espresso, sandwiches and toasting!

Our ingredients
We work with local farmers to source all of the veggies, fruit, meat and dairy that go into our bagels, schmears and sandwiches. Our house-cured and smoked fish is always locally caught— you’ll never see salmon on our menu in San Diego, but you won’t miss it when you try our local halibut!
Our cream cheese schmear is made using Gina Marie cream cheese, organic and California-made. We use Central Milling organic wheat and rye flours.
